Hi Huishan,

I was referring to the 450ml water. You can replace up to 60-70% of the water with coconut milk. You can also add some of the Almond Syrup as well, in which case you will need to reduce the water amount so that the total water is 450ml.

Having said that, this is not exact as I found out that different brands of tinned coconut milk may produce different Hun Kwee textures. So you will need to experiment on it. If you think the mixture is too dry, just add a bit more water as you cook it.

Happy trying!

Warmly,

Pei

Hi Pei,

Just want to clarify, you mean to substitute the 350 ml of water with coconut milk. For the rest of the syrup, is it still remain the same?

Thanks and Best Regards,
Hui Shan

Hi Hui Shan,

Thank you very much for reading my blog.

In the blog, I have a recipe for “Almond Mung Bean Jelly / Almond Hun Kwee”, just substitute up to 60-70% of the water with coconut milk (depending on your taste). I usually do about 60% as I find using too much coconut milk will make the Hun Kwee too hard. It is difficult to get fresh coconut milk in London so I used tinned ones.

Hi Pei,

I was reading about your mung bean and coconut jelly. Is it made using mung bean powder?

I recently bought a packet of mung bean powder for Pandan Kaya Cake and I still have some mung bean powder left.

I am wondering if you have the recipe for mung bean and coconut jelly and if it is made using mung bean, will you kindly share it with me? :)

Thanks and Best Regards,
Hui Shan
