The options may be chosen on the product page Japanese Green Teas Japanese green teas are renowned for their umami sweetness, suggestive of the ocean and refreshing spring greens. Along with an abundance of other fresh, clean and complex flavours, The sweetness of Japanese green teas is not “sugary” but subtle. This umami sweetness is really pronounced, especially on second and third tasting. Umami sweetness is apparent at different intensities depending on the tea and is directly related to how the tea was cultivated and processed. Some higher grades Japanese Green teas (such as Gyokuro) undergo weeks of under-shade (open-air) cultivation, which inhibits astringent (bitter) tannin formation and promotes theanine, the amino acid which we experience as umami. It is a testament to the extraordinary care applied in the making of Japanese green tea, to see huge screens of rice straw or synthetic netting erected to cover entire tea fields, then dismantled after two or three weeks to once again allow direct sunlight on to the young, vitamin-rich tea plants. Steaming is the archetypal Japanese tea-manufacture process. It serves to fix the vivid, dark, emerald colour of the leaf and preserve the natural enzymes packed with flavour. Standard steaming last for less than a minute, while deep steaming imparts a deeper colour and stronger flavour. Wonderful stuff. But it also oxidises things: think iron rusting or copper coins going that weird green colour and the cut side of apple turning brown. Fresh tea leaves, like apples and other plants, have an enzyme called polyphenol oxidase. It is capable of oxidizing polyphenols which are very important molecules for protection against infections to giving them their pigments. Polyphenol oxydase and the polyphenols themselves are stored in the plant’s cells, but when the cells are damaged, say by slicing an apple or dropping and bruising it, the cells are ruptured and the enzyme comes into contact with air. With the help of oxygen in the air, the polyphenol oxidase initiates a series of chemical reactions, transforming the polyphenols and eventually producing melanins (brown pigments). As the leaves are so simply processed, white tea is considered the most natural forms of tea. The minimal processing meant the white teas tend to have a more humble but pure flavour profile. White teas are typically allowed oxidised to no more than 10% – 15%. Some white teas are also roasted to give it a bit of oomph. For oolongs, the tea leaves are given the black tea “treatment” to achieve the desired oxidation levels and then they are given the “green tea treatment” to halt the oxidation process. They can then go to a charcoal roasting process. Light oolong tea leaves are given less of the “black tea treatment” first to get to the desired oxidation levels (typically No more than 40%). They then go through the “green tea treatment” to fix the oxidation level. The liquor of light oolong tea can vary from floral to sweet sugar cane. They can also be very lightly toasted. There is no better way to brighten your day than to enjoy a pot of light oolong tea. The options may be chosen on the product page Green Pu Erh Teas Green Pu Erhs, also known as “sheng” (生) or “raw”, are teas that have been naturally aged in carefully controlled, dry storage with suitable exposure to air. Think of it as a vintage white wine. Green Pu Erhs are usually compressed into the form of cakes or bricks. They are perfect for current consumption and for vintaging. The base green tea leaf is picked and processed in much the same way as if green tea is going to be made, plucked, roasted and left to dry in the sun. But after that the leaves are skillfully encouraged to oxidized and ferment and then they are typically compressed into round tea discs or bricks (a.k.a. ‘Cha Bing’ 茶饼 literally ‘tea cakes’) and stored for vintaging. This produces the characteristic earthy, autumnal flavours and aromas. Green Pu Erhs are herbaceous, smooth, sweet, bright, brisk, clean, soft and slightly woody. There is a hint of roastiness, and they can be frisky if young. They have a lingering finish. The colour of the liquor is bright clear, from pale wheat-yellow to amber depending on the age of the tea. For oolongs, the tea leaves are given the “black tea treatment” to achieve the desired oxidation levels and then they are given the “green tea treatment” to halt the oxidation process. Some dark oolongs may then be slowly toasted over charcoal made from fruit trees. Unlike lighter oolongs, darker oolong tea leaves are given more of the “black tea treatment” first to get to the desired oxidation levels (typically 50% to 80%). Both types of oolongs then go through the “green tea treatment” to fix the oxidation level. The liquor of dark oolong tea can vary from sweet ripened fruit to a robust charcoal roast. Full oxidation results in the blackened appearance of its leaves and the tea’s dark, rich quality. The harvested leaves undergo hours of withering, twisting and rolling to develop high levels of oxidation. This creates black tea’s familiar dark and rice nature. Lesser grades may be chopped. The options may be chosen on the product page Ripened Pu Erh Teas Ripened Pu Erhs, also know as ‘shu pu erh’ (熟普洱) or ‘cooked pu erh’, are teas that have undergone an accelerated vintaging process that involves the very careful, skilled control of storage temperature, humidity and light conditions. Processed as green tea or ‘mao cha’, plucked, roasted and dried under the sun, they are then gathered into large warm piles, where they sit for months fermenting, though sometimes the vintaging is done in just 20-40 days. The process is called ‘wet storage’ (渥堆, ‘wo dui’, literally ‘wet pile’). Ripened Pu Erhs can be loose-leaf or compressed into cakes or bricks or even sometimes into bamboo baskets or citrus peels. They are full bodied, with character and a lingering finish. The flavours are biscuity, fuearthy, woody, herbaceous, smooth, with somethting of the gentlemen’s club!
